Cowboy Caviar

               

We had some family over this weekend for the FSU game (Go NOLES!) and after posting a picture of my ‘Cowboy Caviar’ dip on Instagram, a few people tweeted me and commented that they wanted the recipe.

This is a GREAT dip to throw together for parties. It is different than the usual dips out there, so if you have to bring something to a casual party, like a BBQ or football party, this dip is always a hit… and there is a pretty good chance no one else will bring the same thing!

There are a MILLION variations to this dip, so feel free to switch it up using ingredients you like! You really can’t mess it up!

                    

Here are the ingredients for my version:
1 can black beans (drained)
1 can black eyed peas (drained)
1 can corn (drained)
2 cans diced tomatoes with chilies (drained)
1/2 white onion chopped
1/2 green pepper chopped
3/4 cup Italian dressing
1 teaspoon garlic salt

Throw everything in a bowl. Boom. You’re done. Toss it in the fridge for a few hours if you can, to let the flavors make out for awhile. Bring a bag of scoops Tostitos or regular corn chips and you are done!
