Peanut Butter & Jelly Overnight Oats

I believe breakfast is the most important meal of the day. I am one of those people that cannot leave the house until I have eaten. My kids are the same way. My daughter loves eggs and cream of wheat while my son is a cereal or waffle man. However, he eats lunch later in the school day now and since most of his important school work is done first thing, I worried that he wasn’t getting enough protein.

Peanut butter and jelly sandwiches are his go-to for lunch, so I thought creating a breakfast dish using those ingredients would make him happy, while giving him a boost of protein. I decided to try peanut butter & jelly overnight oats and let me tell you, it turned out SO FREAKING GOOD! He loves it and now says it’s the best breakfast ever.  Depending on how much he eats and how much extra peanut butter we put on top, this breakfast has anywhere between 14-20 grams of protein a serving! Now I know he will stay full until lunch and stay sharp until recess. YASSS!! Mom win!

Peanut Butter & Jelly Overnight Oats

1 cup rolled oats
1 cup milk (you can also use almond milk or coconut milk if you’d like)
2 tablespoons Jif Creamy Peanut Butter
1 teaspoon coconut sugar
1 teaspoon vanilla
1 teaspoon (or more) of Smucker’s Concord Grape Jam
Hemp seeds to top

Just grab a bowl and mix everything together except the jelly & hemp seeds. The peanut butter will be clumpy, but that is okay since it gives the oatmeal yummy clumps of peanut butter goodness. Toss it in the fridge overnight and BOOM it is done. I scoop it into a bowl with some gobs of jelly, a little more peanut butter and a sprinkling of hemp seeds. Easy peasy!
