I am all about the holidays, it is my favorite time of the year! However, I also love to keep things simple. When it comes to holiday treats, they have to be quick, easy and GOOD. I also love recipes the kids can help with since I love making memories with them in the kitchen.
Ice cream cookie sandwiches are one of my most favorite desserts. In fact, for my entire 6th grade year I ate a ice cream cookie sandwich for lunch. Every. Single. Day. (they were so good and surprisingly filling) I decided to make mini versions for the holiday season, since they are easier for my kids to eat and I love the smaller portion sizes.
Now we all know the secret to a perfect ice cream sandwich is a perfect cookie. When it comes to baking though, I need all the help I can get! I am a huge fan of Betty Crocker cookie mixes. They feel somewhat homemade to me since I get to mix up the ingredients. They also have some seriously amazing holiday varieties out right now. I got a few pouches of Pumpkin Spice to use for Thanksgiving cookies and for this holiday recipe I went with Gingerbread all the way!
The cookies turned out amazing and I was able to make a ton of minis for my ice cream sandwiches. Betty Crocker makes it easy to bake fresh recipes with your family… without going crazy. I let my kids select the ice cream we used and they picked vanilla. (a fantastic choice in my opinion) I also picked up some holiday sprinkles to make these treats extra festive.
I like to let the ice cream soften a tiny bit before scooping some onto the cookie. Once I sandwich it together, I dip in sprinkles and put them back in the freezer so they can set. Then I pop them in a ziplock bag to store in the freezer. I have no idea how long they would stay good for, since they never last for more than a couple of days in my house.
Another way to jazz these up is to dip half of them in chocolate (holiday candy melts anyone?) and put them back in the freezer to set. I thought these looked so pretty just how they were. My kids loved them!

Can’t go wrong with ice cream sandwiches!! It’s been years since I’ve purchased a mix, I might have to try the gingerbread one since my husband loves gingerbread.

This is my favourite time of the year too! Well, in addition to my birthday lol. These ice cream sandwiches are the perfect treat. Fun to make and fun to eat! (PS: I can’t believe you had ice cream cookie sandwich for lunch all of 6th grade. That can totally happen to me haha!)
