The other day I spotted a huge bag of pumpkin shaped marshmallows and it was love at first sight. However, I jumped into this love affair too quickly… and soon discovered the truth about my puffy pumpkin lover. These aren’t pumpkin FLAVORED. It is just a regular old marshmallow, moonlighting as a big, orange pumpkin.

My fault for assuming these were pumpkin flavored (isn’t everything pumpkin flavored this month??) but once I got over the initial disappointment I realized these were really good. I LOVE chocolate covered marshmallows, and I thought these would be perfect to use to make some at home, since they are so big!
I just microwaved dark chocolate chips until they melted, added a bit of coconut oil to make it smooth, dipped the marshallows and threw on some Halloween sprinkles. Then just set them on parchment or wax paper and put them in the fridge. They were so good & my kids loved them!
Also, I saw the Wilton monster cupcake kit againt this year at stores… I made them last year and they turned out super cute.
So if you need some help getting into the Halloween spirit, but are short on time… now you are set! I just gave you two simple & festive ideas!

These are so adorable! The only time I eat marshmallows is when I have s'mores. However, that said, my daughter would LOVE these-and I would likely eat one or two…Now I need to see if my store has them! Haha!

They are REALLY easy, the only tricky part is the consistency of the chocolate, but the coconut oil (or a little bit of any oil) really helps!
