
So you’ve probably ‘pinned’ at least one version of those 2-ingredient cookies. The cookie is made with bananas and quick cook oats. That’s it. Then you can just throw in whatever else you’d like. There are tons of variations out there, including different mix-ins. (Chocolate chips, raisins, nuts… You can throw in almost anything)
Let’s just say I was doubtful about this so-called cookie. There’s no way it can be good, right? It’s too easy. So I decided to give it a try.
For my version I used 4 ingredients:
- 2 ripe bananas
- 1 cup of organic quick cook oats
- 2 tablespoons of Justin’s Maple Almond butter (my current OBSESSION)
- 1/4 cup of dried cranberries
You just mush it all together in a bowl with a fork, scoop it out into little cookies, and bake at 325 degrees for about 15 minutes. (Longer if you want them to be more firm) It was super easy to make, Hudson did most of the work.
Our entire family was SHOCKED by how good these things are. For real. They are really freaking good. Hudson tasted the ‘batter’ before I cooked them & he thought they were ‘gross’ but he tried one after they were cooked and loved them! (He ate two right off the bat)

The version above made 16 cookies which makes each cookie 50 calories. (Mostly because the almond butter had 190 calories)
I am definitely going to make these again, and I already have a million ideas. Peanut butter or Nutella instead of almond butter. Add a scoop of protein powder. Try it with some cinnamon. I even saw one recipe that used canned pumpkin instead of banana! (say WHAT!)These are really good warm right out of the oven,and they keep for a few days if you keep them in the fridge. Don’t leave them out, they turn to mush.
Give these cookies a try. You can customize them however you like & if I didn’t screw them up… Then you definitely won’t either!
