My Current Food Obsession: Beluga Lentils

                               

 

I am always looking for ways to spice up dinner. Since my hubby & I have been eating healthy we have gotten ourselves into a bit of a rut.  I was in Target when I went to grab one of those microwave bags of brown rice when I came across my current mealtime obsession.

I never heard of these, but apparently they are pretty common since I found a bunch of recipes using them on Pinterest. Anyway, the Simply Balanced kind from Target microwaves in the bag so they are ready super quick. You can also buy them dry, but I don’t have time for that.

                                         

They are called beluga lentils because they resemble caviar. They are smaller and more firm than regular lentils and have a really good flavor and texture. Like most beans, a half a cup has a lot of protein too (21 grams) which helps to keep you full.

I top them with shrimp that I sauté in a little bit of teriyaki or stir fry sauce and it is SO GOOD! Not to mention, it takes less than 10 minutes to make the meal from start to finish. They also work well to make vegetarian tacos, just season them up like you would the meat. I bet they would be good to make veggie bean burgers, but you should know by now I rarely make anything from scratch, so feel free to give that a try & let me know how it goes.
